Sofrito Recipe

Sofrito is something from my culture that we use in a lot of our dishes. I wanted to share the recipe with all of my readers/followers. You will see that some of the dishes I have posted on here call for some sofrito, well here goes the recipe. I make it and I used to sell it and I may go back to that but as of right now, here is the recipe for those who want to make it at home. 

Ingredients:

·  5 green peppers seeded and chopped

·  2 red peppers seeded and chopped

Merry Christmas & Happy New Year!

 

Hello everyone! It has been a while since my last post but I am back. I have been slowly trying to get back into the mix of things and back to my blogging but it has been hard. Let me update you all again on what has been going on. I am still trying to move back to where I used to live 6 years ago because I cannot drive due to my surrent health issues. I had another child back in 2021 with a man I thought would be my forever after leaving an abusive man that I was with for 10 years back in 2016 but that man ended up leaving me for someone else and it took a toll on me. I fell into a deep depression right in the middle of my postpartum depression. During my pregnancy I also became diabetic. In the summer of 2022 I found out I was being cheated on and have been cheated on during my entire relationship with whom I thought was the absolute love of my life, would be my husband, and the father of my youngest daughter. That led my seizures that began happening in September of 2022 which has continued until now. I am hoping that this goes away, that I can move back home and get everything back to how it was. The place I had applied to ran a credit check and I don't know why if I had been a loyal tenant with them for the past 13/14 years and the property I am living in just was sold to someone else and not under them anymore. This is a lot to dump on all of you but sometimes things get real and we need to appreciate the things we have and fight for the ones we love and if there is no love there, just sit down with them and let them know instead of stringing them along. I am proud of all 3 of my kids and so happy to be their mother. Those kids are my heart and I will always be both their mother and their father and I will fight anyone who says anything different. I pray and hope that these seizures go away so I can get behind a wheel again and feel safe driving and feel confident driving. I pray and hope that I will no longer be diabetic. My kids need me and most importantly I need myself. Stay humble, stay healthy, stay aware, and remember to always stay loyal. I will start to begin posting more updates on recipes, budgeting, sales, etc, come the new year.

Master Grocery List!



Have you thought about making a master grocery list? I have and actually I did. I made it and I printed it out so that I can laminate it and use a dry erase marker so I can use that when I go shopping instead of just making a list over and over again. Just create your list on Microsoft Word and print it out. Make it what you usually buy and if you have a laminator then go right ahead and do what I did!

Where have I been?



Well let me explain. I have been going through a lot. I posted an update in June which you can read here but I wanted to give you another update. I am currently working on my 5th book and I am also still focusing on myself so I can be a better woman and mother. I always tell my kids and my friends that one should always tell the truth. Why lie? What is the purpose and what are you gaining from that lie? I feel so much better since that post. I have slowly gotten out of my depression stage but I did end up having a really bad car accident 11 days after that post. I had a diabetic seizure early in the morning while driving to my parents house with my toddler in the car and we are safe by the grace of God. My car is totaled so I do not have a car at the moment but I am saving for one and I am currently trying to move closer to my parents so I won't have to commute 45 minutes when I do get another car. I'm afraid of driving again because of my fear of having another accident but other than that, I am getting better with my insulin (after a lot of fighting with my insurance). My Facebook page has become more about my poetry and so has my Instagram page but I will be incorporating my blog posts onto those pages as well as my TikTok page. I will be including my reviews on here and on my pages from the products I have been receiving from companies. I am trying to get back in the groove for all of you and get back to my couponing, my reviews, my DIY's, my recipes, and everything else!

Recipe of the Day: Mac & Cheese

 


I made this for dinner for the kids yesterday and I received numerous inbox messages on Facebook asking me for the recipe so I decided why not post it to my my blog and then share it with everyone. So here it goes!

Ingredients:
  • 1 tablespoon canola oil
  • 2 pound elbow macaroni
  • 1 cup melted butter
  • 1 cup shredded Muenster cheese
  • 1 cup shredded mild Cheddar cheese
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 cups whole milk
  • 2 cup cubed Velveeta cheese
  • 4 large eggs, lightly beaten
  • 2 teaspoons black coarse pepper
  • 2 teaspoons White pepper
  • 1 Tablespoon smoked paprika
  • 1 Tablespoon old bay
  • 1 Tablespoon garlic powder
  • 1 Tablespoon onion powder
  • 1 Tablespoon Adobo
  • 1 Tablespoon  Badia sazon complete seasoning
  • 3 Tablespoon himalayan salt
  • 1 Tablespoon oregano
  • 1 Tablespoon chili powder
  • 1 Tablespoon ground mustard
Directions:
  1. Preheat the oven to 350 degree F.
  2. Grease baking dish/dishes.
  3. Add the oil to a large pot of water.
  4. Bring to a boil over high heat.
  5. Add the macaroni and cook until al dente (7-8 minutes).
  6. Drain the pasta well and return to the pot.
  7. Add the melted butter and stir well.
  8. In a bowl, combine the Muenster, mild and sharp Cheddars, and the Monterey Jack cheeses.
  9. Stir the milk into the macaroni.
  10. Reserve 1 cup of the shredded cheese mixture and set aside.
  11. Add the remaining shredded cheese to the macaroni.
  12. Stir well.
  13. Add the Velveeta cheese, eggs, seasonings.
  14. Mix well until it is all melted and creamy.
  15. Pour into your baking dish.
  16. Sprinkle with the reserved 1 cup of shredded cheese (you might need to grate come cheese to cover the rest if you have multiple baking dishes.
  17. Place the baking dish or dishes (whichever you decide to do, I split mine up into different dishes so I can save it and pack it up for the next day) in the oven and bake at 350 degrees F for 35 minutes or until hot and bubbly.
